Why do we have to grade sweet potatoes

After the sweet potatoes are harvested, the first thing we need to do is to sort them. Why do we have to grade sweet potatoes? Well , if you have grown sweet potatoes, you would have noticed that sweet potatoes come in different sizes and varying sizes. Some are huge, maybe as the size of  a human head, called a jumbo, and there are some which fall in grade one, which is of high quality, grade two, and some non-marketable. So while grading the sweet potatoes, you can differentiate and categorize these sweet potatoes based on size and quality. Because you don’t want the bad and non-marketable sweet potatoes to be sold with the good ones.

Based on USDA grades, there are different grades. The grade one sweet potatoes are not very big and not very small either. The ideal size is 6-9 inches in length and 3.5 inches in diameter. Grading sweet potato is done using a sweet potato sizer with many exits.
